There’s a trick to this. 😄 The biggest factor isn’t the peeling technique; it’s how you start and cool the eggs.
For eggs that peel cleanly:
- Bring the water to a full boil first. Don’t start the eggs in cold water.
- Gently lower the cold eggs into the boiling water with a spoon.
- Turn it down just enough to maintain a gentle boil.
- Cook 11–12 minutes for a fully hard-boiled egg.
- Immediately transfer them into a bowl of ice water and leave them there for at least 10 minutes.
- Crack the egg all over, then start peeling at the fat end, where the air pocket usually is. Peeling under running water can help enormously.
One other biggie: very fresh eggs are harder to peel. Eggs that have been sitting in the refrigerator for a week or two generally peel much more cleanly.
And you don’t need vinegar, baking soda, salt, voodoo, or negotiations with the chicken. 😂 Hot start + ice bath + eggs that aren’t brand-new is the winning combination.
